Momentumpg 5: You can also use Momentum counters to force an opponent to replace a dice of your choice for any challenge rolls they make during your action.
I am confused by this sentance, is it a die or multiple dice that may be replaced?
Secondly, can this momentum be used in this way to change a die roll if they flopped, like on injury? Or does it have a similar restriction about not changing a flopped result. You are in a charitable mood and don't really want to kill that imp after all.

I suspect 2NSBACL (2 nations separated by a common language). In this case, British usage of 'dice' as both singular and plural. For the quoted rule, I believe the intent is each momentum counter can change one die.

My rules lawyer hat says that you can change an opponent's flop result, since the rules don't forbid it. But if that wasn't the intent, I would be happy enough to go the other way. (Better an injured imp on the field than a rested Hunter coming off the bench, eh? Although you'd need a good string of rolls to change a flop to a "still in the game".)

Each momentum counter can effect one die.
You cannot effect any flop roll .. again overall consistent rules.
I'll make this more clear
